This is one of the numerous elusive subtle yet up-to-the-minute recipes of mine on the theme FRIED EYE. The recipe was born when I was insomniacally trying to catch some sleep.
It is a very simple recipe and anyone who loves Aloo Pitika will love to savour this recipe too. Best of Luck for the try!
Ingredients needed are as follows
1 large green capsicum
1 medium size potato
3 pieces of green chilies
1 table spoonful of red chili powder
1 medium sized onion
1 table spoon of cumin ( jeera) seeds
1 Cucumber, 1 Pea and 2 Dry Red Chillies for Dressing
1. Boil potato, when done peel off the skin and mash it.
2. Chop onions and green chilies finely. Heat oil, put the cumin seeds and fry until golden brown. Turn off the heat and let the oil cool. Mix the mashed potatoes with onions, green chilies and oil with cumin seeds.
3. Slice the capsicum into two halves and de-seed them. Put the mixture of mashed potatoes inside the capsicum.
4. Heat a spoonful of oil and fry the capsicum till tender.
Place a sliced cucumber on the fried capsicum and top it with a pea to make a green eyed stare. The stare becomes lively with the fried dry red chilli to represent the licentious lips.
